Oh head bud. Noticed my bud was having trouble coming up with an Earth symbol! Boy have I found the cure for this! 
Alright so let's imagine...You imagining? Great! Anyway...Imagine this: A circle... yes simple...A circle with three equal spaces different Earthy colors..(brown...green...light green...) and inside each color was a symbol. if there was brown their should be grass. If there was green..(darker than light obviously but still pretty dark...) anyway but in that green there was a mountain. And in the last color light green (lime color I guess...just lighter...or more white) there would be a tree with leaves dark green... TA DA

TA DA Interesting and creative, but a little too complicated for a cutie mark. The symbol needs to be simple but still recognizable as representing earth.
then have you tried life? Like flowers, grass etc.? Or the following picture. it's said to be the alchemist symbol for Earth element. sorry the drawing is bad...cant draw on the computer lol
